So, what is a grease trap?

A grease trap is simply a trap placed in the drain or waste pipe to prevent grease and other kitchen fat from making their way into the sewer system. It is also known as a grease interceptor, catcher, FOG (Fats, Oil and Grease) traps or grease recovery/management devices.

The grease trap is simply a receptacle where FOG is intercepted before they can make it to the drainage system. It does this by trapping the FOG so that the clear water can pass without any more disturbances.

How does this grease trap work?

Grease trap works with the understanding that water is denser than oil and grease (about 10 to 15% denser) and so they cannot mix due to this difference in density. This is why oil and grease will float on top of the water instead of mixing with it.

The grease trap slows down incoming wastewater and cools it down so that it can be divided into 3 layers. The grease and oil floating on top is trapped by a system of baffles, while solids are left to settle at the bottom of the interceptor. The clear water is left to escape through an outlet baffle.

Some trap interceptors have a strainer which helps collect solid debris, thereby reducing the number of solids that will be collected at the bottom of the interceptor.

The grease trap or interceptor is to be cleaned constantly to avoid the build-up of grease and solid particles, as this build up may allow solid debris and grease to start flowing through over time.
